ABOUT Pepper Chicken Roast RECIPE

Spicy and flavorful chicken leg pan roasted with cracked peppercorns and some basic spices.

Ingredients Serving: 2

  1. Onion - 1 chopped 
  2. Green chillies - 2 chopped 
  3. Tomato - 1 chopped 
  4. Red Chilly powder - 1 tsp 
  5. Peppercorns cracked - 2 tbsp 
  6. Curry leaves - 2 sprigs 
  7. Salt to taste 
  8. Oil - 2-3 tbsp 
  9. For Marination:
  10. Whole Chicken leg - 1 large
  11. Curd - 1 tbsp or use 1 tbsp Lemon juice 
  12. Red Chilly powder - 1 tbsp 
  13. Peppercorns cracked - 1 tbsp 
  14. Roasted coriander powder - 1 tsp 
  15. Roasted cumin powder - ½ tsp 
  16. Garam masala powder - 1 tsp 
  17. Salt to taste 

Instructions

  1. Take the chicken leg and make slashes on it. Make a paste of the marination ingredients and rub the paste all over the chicken. Keep the marinated for sometime. 
  2. Heat oil in a pan. Lay the marinated chicken and shallow fry them in low-medium heat till the chicken is cooked completely on all sides and nicely brown from outside.
  3. Flip over the chicken occasionally for even cooking. It takes approximately 20-25 min. Take out the chicken and keep aside. 
  4. In the same oil add the onion and green chillies, curry leaves and saute till onion turns soft.
  5. Add tomatoes and saute till mushy. Add the chilly powder and cracked peppercorns, salt and mix well.
  6. Now add the fried chicken back, stir and mix well and fry for on low-medium heat for about 5 mins and take off the heat.
