ABOUT Flavoured Vermicelli Pudding(Seviyan Kheer/Sheer Khurma) RECIPE

Vermicelli Pudding also known as Seviyan Kheer in north India and Semiya Payasam in south India is indicative of a festive or joyous mood. It is a sweet pudding made from milk, vermicelli, spices and dry fruits. This dish can be made quickly and served as a warm or chilled dessert.

Ingredients Serving: 4

  1. Milk full cream 500ml
  2. Fine vermicelli 1/2 cup
  3. Ghee 1 tablespoon
  4. Flavour spice powder: 4 green cardamoms, 2 cloves, fennel seeds 1 tsp
  5. Sugar 3 tablespoons
  6. Charoli seeds 1 tablespoon
  7. Golden raisins 1 tablespoon
  8. Unsalted pistachios 10 sliced
  9. Unsalted almonds 8 sliced
  10. Unsalted cashewnuts 8 chopped
  11. Few saffron strands

Instructions

  1. Heat ghee and lightly roast the vermicelli. Transfer to a plate
  2. In the same ghee saute the charoli seeds
  3. Pour milk into a saucepan and bring to boil.
  4. Add saffron strands and flavouring spice powder
  5. Add the roasted vermicelli and simmer on low heat till cooked
  6. Add sugar and simmer for a minute.
  7. Put off flame.
  8. Add all the dried fruits and raisins and stir
  9. Serve warm or chilled according to preference.
