ABOUT Chicken kosha RECIPE

Chicken kosha is a typical Bengali cuisine and almost prepared in every Bengali household. Chicken kosha means a semi dry chicken curry where chicken pieces are slow cooked with other spices. This recipe goes well with plain rice, roti or nan.

Ingredients Serving: 3

  1. Chicken : 500 grams
  2. Onion : 2 large (sliced)
  3. Ginger : 1 inch (grated)
  4. Garlic : 4 to 5 large cloves (grated)
  5. Tomato : 1 small (roughly chopped)
  6. Turmeric : 1 ½ tsp
  7. red chili powder : 1 tsp
  8. cumin powder : 1 tsp
  9. coriander powder : 1 tsp
  10. whole garam masala powder : 1 medium size cinnamon and 3 cardamom (freshly ground)
  11. bay leaves : 2 medium size
  12. mustard oil : 5 to 6 tbsp.
  13. sugar : 1 tsp.
  14. salt to taste

Instructions

  1. Clean and wash chicken pieces and marinate them with ½ tsp salt and ½ tsp turmeric powder for 30 minutes.
  2. Heat oil in a pressure cooker and add sugar in it.
  3. When sugar becomes golden in color add sliced onion and bay leaves in it.
  4. Fry the onions till it becomes golden in color and then add grated ginger and garlic in it.
  5. Mix them properly and add turmeric powder, chili powder, coriander powder and cumin powder in it.
  6. Fry till oil comes out from the mixture.
  7. At this time add chopped tomatoes in it and fry till it becomes soft and tender.
  8. Now add marinated chicken in it and mix well with the gravy.
  9. Cook for 5 minutes on medium flame by constant stirring.
  10. 10. Then add ¾ th cup of water in it and season it with salt. Be careful while adding salt as salt is added previously during marination.
  11. 11. Cover it with the lid and wait for one whistle on high flame.
  12. 12. In the mean while crushed the cinnamon and cardamom in a motor.
  13. 13. Let the air comes out automatically from the pressure cooker.
  14. Mix the whole spices in the curry and if the curry is too thick you can add little bit of warm water to get a desire consistency.
