Ingredients Serving: 4

  1. 1 large cauliflower with florets cut
  2. Water as needed for blanching cauliflower
  3. For marinade:
  4. 2 tbspn gram flour/besan
  5. 1 tbsn oil
  6. 1 tbsn turmeric powder
  7. 1 tbspn Kashmiri red chilli powder
  8. 1 tbspn coriander powder
  9. 1 tbsn garam masala powder
  10. Salt to taste
  11. 1 tbsn kasuri methi leaves dry
  12. Juice of half a lemon
  13. 2 tbsn curd beaten
  14. 1 tbsn ginger garlic paste
  15. 1 tbsn mustard oil
  16. FOR GRAVY:
  17. 1 onion chopped roughly
  18. Paste of 1 medium sized tomato
  19. Salt to taste
  20. 1 tbsn ginger garlic paste
  21. 1 tbsn red chilli powder
  22. 1 tbsn turmeric powder
  23. 1 tbspn coriander powder
  24. 1 tspn garam masala powder
  25. 1 tbsn cumin seeds
  26. 2 tbsn oil

Instructions

  1. BLANCH FLORETS OF 1 MEDIUM- SIZED CAULIFLOWER IN HOT WATER FOR 15 MINUTES. STRAIN.
  2. ROAST 2 TBSP BESAN OVER LOW HEAT USING 1 TBSP OIL. ROAST TILL SLIGHTLY BROWN.
  3. COMBINE 1 TBSP TURMERIC, 1 TBSP RED CHILLI POWDER, 1 TBSP CORIANDER POWDER & 1 TBSP GARAM MASALA.
  4. ADD SALT TO TASTE, 1 TBSP KASURI METHI LEAVES & 1 TBSP GINGER GARLIC PASTE. MIX.
  5. ADD 1 TBSP MUSTARD OIL & JUICE OF HALF LEMON.
  6. ADD 2 TBSP BEATEN CURD. MIX WELL.
  7. ADD THE BESAN PASTE & ADD THE CAULIFLOWER FLORETS.
  8. MARINATE FOR 15 MINUTES. GRILL CAULIFLOWERS FOR 10 MINUTES OR UNTIL CRISP.
  9. HEAT 2 TBSP OIL AND ADD 1 TBSP CUMIN SEEDS. SAUTÉ 1 CHOPPED MEDIUM ONION TILL BROWN.
  10. ADD 1 TBSP GINGER GARLIC PASTE AND SAUTÉ.
  11. ADD PURÉE OF 1 MEDIUM SIZED TOMATO. MIX WELL AND BRING TO A BOIL.
  12. ADD 1 TBSP GARAM MASALA, 1 TBSP RED CHILLI POWDER & 1 TBSP TURMERIC. MIX.
  13. ADD 1 TBSP CORIANDER LEAVES. ADD GRILLED CAULIFLOWERS. SIMMER FOR 15 MINUTES.
  14. GARNISH WITH CORIANDER LEAVES. SERVE HOT WITH RICE OR INDIAN FLATBREADS.
