ABOUT Pork Bafat RECIPE

Pork Bafat commonly known as Dukra mass in konkani is prepared in every catholic household almost every weekend, mostly served with sannas ( soft steamed rice dumplings) or bread buns. The combination of spices in this preparation gives the pork a unique hot, spicy and tangy flavour. Ready made Bafat powder is available in Mangalorean food stores, however the freshly ground paste gives this dish a completely different dimension and flavour.

Ingredients Serving: 4

  1. 1 Kg Pork
  2. onions - 6 cut into cubes
  3. Green Chilies - 6 Sliced
  4. garlic - 15 - 25 pods
  5. ginger - 2 inch finely chopped
  6. Bay leaves – 2
  7. vinegar – 1/2 tsp (optional)
  8. salt to taste
  9. cloves - 12
  10. cinnamon - 1 inch, 3 pieces
  11. *Ingredients for Bafat masala
  12. Kumta chilli Dry - 10
  13. Short Red Chillies, Dry - 6
  14. Black peppercorns - 12
  15. onion -2
  16. coriander - 2 tablespoon
  17. jeera 1 teaspoon
  18. mustard 1/2 teaspoon
  19. garlic - 7- pods
  20. tamarind - one lemon size ball
  21. turmeric - 1 tablespoon

Instructions

  1. Clean and chop the meat chunks into cubes, chop onions into cubes and finely chop ginger and garlic, slit the green chillies
  2. Prepare the bafat masala by grinding the masala ingredients into a smooth paste.
  3. Heat a kadai and add meat along with cinnamon, cloves, bay leaves, salt, turmeric powder. Cook it for a while, then add the ground masala (bafat powder) and stir well
  4. Cook this on medium flame till its almost done. Now add chopped onion, garlic, ginger, vinegar. Saute for 5 min.
  5. Serve this with sannas (soft mangalore idlis)
