Lamingtons are my recent likings . To make them little healthier, I used cardamom spiced carrot cake and the flavoured the frosting also with cardamom. Absolutely divine, melt in mouth full of flavours treat for your loved ones.

Ingredients Serving: 10

  1. 1 cup flour
  2. 1 tsp baking soda
  3. 1/4 tsp salt
  4. 1 tsp cardamom powder
  5. 1/4 cup oil
  6. 1/4 cup yogurt
  7. 2/3 cup powdered sugar
  8. 2 eggs
  9. 1 cup shredded carrots
  10. For the frosting
  11. 2 cups icing sugar
  12. 1/4 cup cocoa powder
  13. 1 tsp cardamom powder
  14. 2 tsp butter
  15. 1/4 cup milk
  16. For rolling the lamingtons
  17. 1 1/2 cup desiccated coconut powder


  1. First all all to bake the cake, sieve all the dry ingredients together, flour, baking soda,salt, cardamom powder and keep aside.
  2. In a mixing bowl, add the sugar and eggs and mix well. Add in the yogurt and oil and mix them nicely.
  3. Fold the dry ingredients into the wet ingredients and mix till no lumps.
  4. Fold in the shredded carrots and mix well.
  5. Take a greased and lined square baking tin and pour the mix into it.
  6. Bake it in a preheated oven at 180 degree C for 35-40 mins till a skewer comes out clean.
  7. Demould the cake when little cool and then let it cool further.
  8. For the chocolate frosting, mix all the ingredients icing sugar, cocoa powder, butter , cardamom powder and milk and mix it in a double boiler till a pouring consistency is achieved.
  9. For the assembly of lamingtons, cut the cake into 2 inch square pieces and dip each piece in the chocolate frosting and then roll it in the desiccated coconut.
  10. Put the lamingtons on a clean wire rack to set and after setting , serve them at tea/ coffee time.
