ABOUT Nei Choru/Ghee Rice [Pressure Cooker Method] RECIPE

Nei Choru is another one of the traditional dishes made in Sri Lanka. Also it is famous among the coastal region Muslim community's in India. The flavour of the ghee and other spices makes it more regal. This mild rice goes well with any spicy veg or non-veg gravies, but usually served with Paruppu Kathirikai, Mutton Kuzhambhu etc...

Ingredients Serving: 5

  1. Rice - 4 Cups
  2. Onion - 3 Medium
  3. Green Chilli - 8
  4. Pudina/ Mint - Handful
  5. Ginger garlic paste - 2 tbsp
  6. Elachi/Cardamom - 3
  7. Cloves - 4
  8. Cinnamon - 2
  9. Star anise - 1
  10. Bay Leaf - 1
  11. Pandan leaves/Rambai eelai - 2
  12. Coconut milk - 6 cups
  13. Water - 2 Cups
  14. Ghee - 5 tbsp
  15. Coconut oil or sunflower oil- 1 tbsp
  16. Fried Cashew - for garnish

Instructions

  1. Wash and soak rice for 30 minutes. In the meantime, take a pressure cooker, add ghee, coconut oil and to this add pandan leaves, elachi, cloves, cinnamon, star anise, bay leaf & green chilies. Saute for a minute.
  2. Add onions to this and fry till translucent. Now add ginger-garlic paste and fry till raw smell wafts. Add mint leaves and stir by pouring squeezed coconut milk and water.
  3. Bring this to boil on high flame. Drain water from rice and add to above boiling mixture. Pressure cook for 1-2 whistles or for 10-12 minutes.
  4. Turn off the flame and when the pressure settles down. Sprinkle fried cashews and serve warm.
  5. Notes: Only Green chillies are added for spiciness in this rice, you can use the same or decrease according to your families liking. Also if you are serving for elder members at your home you can add 1/4 tsp jeera too while frying other ite
