ABOUT Whole Wheat Vegan Beet Walnut Cake RECIPE

A simple guilt free cake with no butter, no eggs, with whole wheat flour, beets and walnuts. Moist, fudgy and chocolaty, it is simply divine. . A recipe that is truly healthy and happy.

Ingredients Serving: 6

  1. 1 ¼ cup whole wheat flour
  2. 1 cup soy milk (unsweetened soy milk homemade or store bought)
  3. 2 medium size beets boiled, peeled and pureed
  4. ¾ cup sugar (you may adjust according to taste)
  5. ½ cup olive oil
  6. ½ cup cocoa powder
  7. ¾ teaspoon soda
  8. ½ teaspoon baking powder
  9. 1 teaspoon apple cider vinegar
  10. 1 tablespoon confectioner’s sugar
  11. A pinch of salt

Instructions

  1. Preheat oven to 380 degrees C. Line the base of a 7 x 7 inches square cake tin with parchment paper. Grease and dust the sides.
  2. Pressure cook the beets till tender. Cool. Peel and puree. Measure half cup and keep aside.
  3. Whisk together soy milk and apple cider vinegar. Set aside for a few minutes. It will curdle. This is vegan buttermilk. Add sugar, olive oil, vanilla essence and beet puree. Mix well.
  4. Whisk together whole wheat flour, baking soda, baking powder, cocoa and salt.
  5. Add dry ingredients to wet ingredients. Mix gently till the batter becomes smooth and lump free. Do not over mix. Fold in walnuts tossed in a teaspoon of flour.
  6. Pour the batter in the prepared pan. Bake for 25 to 30 minutes or till a toothpick inserted in the center comes out clean.
  7. Remove from the oven and remove from the pan after 10 minutes. Cool in the rack.
  8. Slice next day. Sprinkle confectioner’s sugar before serving.

again the same question!! i love ur recipes but since my husband is into fitness he doesnt take sugar.. can i substitite with palm and coconut sugar...
