ABOUT Vegetable poha RECIPE

I made this healthy recipe on nutrition day held in my son's school. I used vegetables like potatoes, peas, capsicum, carrot and onion to prepare this.

Ingredients Serving: 2

  1. Flattened rice - 1 cup
  2. Potatoes - 1
  3. Peas - 1/2 cup
  4. Chopped carrot - 1/4 th cup
  5. Capsicum - 2 tbsp
  6. Onion - 1
  7. Salt
  8. Turmeric powder - 1/2 tsp
  9. Sugar - 1 tsp
  10. Curry leaves - 10
  11. Mustard seeds - 1 tsp
  12. Oil
  13. Coriander leaves [handful]
  14. Lemon juice - 1 tbsp
  15. Peanuts - 2 tbsp

Instructions

  1. Wash Flattened rice(poha) nicely and strain all the water out.
  2. Mix little of sugar and salt in washed Flattened rice
  3. Put oil in a pan. Let it warm and add mustard seeds. Let them crackle.
  4. Now add curry leaves and green chillies. Avoid chillies if making for kids.
  5. Add onions and fry till it turns golden brown.
  6. Add vegetables like boiled potatoes, peas, carrot, capsicum and saute them well till they done.
  7. After sauting vegetables add Turmeric and salt.
  8. Give them a nice mix.
  9. Now add washed Flattened rice and mix well on low flame for 5 minutes
  10. Then add coriander leaves and turn off the gas
  11. Squeeze lemon over it and mix it. Before serving add roasted peanuts.
