ABOUT Cholle masala RECIPE

It's basically a north Indian dish. Yummy and healthy dish made with white chicpea. You will need to soak Cholle a night before you make it. Or around 7-8 hours. Then pressure cook it. It goes well with Puri, naan , bhature. So have it as you like it

Ingredients Serving: 4

  1. 1 cup chole / chickpea, soaked overnight
  2. 4 tbsp oil / butter
  3. 1 bay leaf
  4. 1 inch cinnamon stick
  5. ½ tsp cumin seeds
  6. 1 onion, finely chopped
  7. 1 tsp ginger-garlic paste
  8. 2 tomatoes, finely chopped
  9. 1 tbsp kashmiri chilli powder
  10. ½ tsp turmeric powder
  11. 1 tsp coriander powder
  12. ½ tsp cumin powder
  13. ¾ tsp aamchur powder / dry-mango powder
  14. salt to taste
  15. ½ tsp garam masala
  16. 2 cups water
  17. 2 tsp coriander leaves
  18. finely chopped
  19. ½ lemon juice (optional)

Instructions

  1. firstly, in a cooker heat oil / butter. using more oil makes dhaba style chole masala. furthermore, saute bay leaf, cinnamon stick and cumin seeds till they turn aromatic.
  2. Now add finely chopped onions and ginger-garlic paste. saute till it turns golden brown. add tomatoes and saute till they start releasing oil.
  3. Now add chilli powder, turmeric, coriander powder, cumin powder, aamchur powder, garam masala and salt. saute for a minute. then add soaked chickpea / canned chickpea. make sure to soak chickpea overnight if its not canned chickpea. further add 2 cups of water.
  4. Add more water if you like it to be more gravy. give a good mix. and check the seasonings. make sure the masala water to be slightly salty as chole will absorb while cooking.
  5. pressure cook for 7-8 whistles on medium flame. allow the pressure to release by itself before opening cooker. squeeze lemon and mix well. garnish with coriander leaves. finally, serve hot with poori / chapathi / bhatura.
