Cream of Pumpkin Soup is creamy,velvety smooth and delicious.This delicious soup has an enticing flavor from the roasted pumpkins, and spices. It is a simple and healthy recipe that can be served in the evenings especially during the cold winter season.The main ingredient "Red pumpkin" is one of nature's richest source of alpha-carotene which is good for the heart and also promotes healthy vision and immune system. This luxuriant Cream of Pumpkin soup is mild and creamy in taste. The touch of cinnamon gives it a special taste and flavor. Another important point to be noted is this delicious soup doesn't contain added sugar and is loaded with benefits of red pumpkin and therefore ideal for all age groups right from toddlers to elders including pregnant women .

Ingredients Serving: 4

  1. 1 bowl Red Pumpkin (bhopla /kaddu) cubes
  2. 2 teaspoon butter
  3. ½ teaspoon cinnamon powder
  4. ½ teaspoon cumin-pepper powder
  5. Salt
  6. 3 bowl water or vegetable stock
  7. 1 teaspoon fresh cream

Instructions

  1. Peal the skin of red pumpkin, cut and separate the seeds
  2. Cut the pulp into small cubes.
  3. In a sauce pan heat two teaspoons of butter.
  4. Add 1 bowl pumpkin cubes to it
  5. Add salt according to taste and saute for a minute
  6. Add a bowl of water
  7. Cover with lid and Simmer for 2-3 minutes or till it turns soft and tender
  8. Allow to cool down
  9. Then transfer it to a mixer jar and blend into smooth puree
  10. Return this puree back to the saucepan and place over low heat.
  11. Add ½ teaspoon cinnamon powder
  12. Add ½ teaspoon cumin-black pepper powder
  13. Mix well stirring all the while.
  14. Add 2 bowls of water to adjust the consistency, stir well and bring to boil.
  15. Top it with a teaspoon of fresh cream and serve hot.
