ABOUT Eggless Whole Wheat Jaggery Cake RECIPE

This recipe is a nutritious version of regular cake and very tasty.

Ingredients Serving: 4

  1. 2 cups whole wheat flour
  2. 1/2 cup fresh curd
  3. 1/2 tsp baking soda
  4. 1 tsp Baking powder
  5. 1/4 tsp table salt
  6. 1 tsp orange zest
  7. 1/2 cup orange juice
  8. 1/2 cup grated organic jaggery grated
  9. Milk as per requirement
  10. 4 tsp Honey
  11. 2 pinch each of nutmeg powder and cinnamon powder
  12. 1/4 cup each of Tooti Frooti and mixed dry fruits
  13. 1 tsp Sesame seeds

Instructions

  1. Combine the whole wheat flour, salt, baking powder, nutmeg and cinnamon powder and sieve well. Keep aside.
  2. Heat the butter in a pan, remove from flame and then add the jaggery till the jaggery melts.
  3. Remove from the flame and transfer this to a bowl. 4. Add the curd, nuts,tutti Frooty, orange peel, juice, honey and milk powder and whisk well in the butter/jaggery bowl.
  4. Add the flour mixture gradually and mix well making a thick batter. Add little milk to adjust the consistency
  5. Transfer the mixture into a greased baking dish and sprinkle the sesame seeds on top
  6. Bake in a pre-heated oven for 45 minutes at 180 degree Celsius
  7. Once done, take out the pan from oven and cool on a wire- rack and then serve in pieces.
