ABOUT Dill Paratha RECIPE

Dill leaves also known as suva, shepu, sabbasige etc in Indian languages; is a green, leafy vegetable that has a unique taste and a distinct flavor. Dill leaves are low in calories and loaded with various nutrients like calcium, magnesium, iron and flavonoids. Regular consumption of these leaves prevents bone loss, osteoporosis caused due to calcium deficiency and is also beneficial in strengthening bones. At the same time it is difficult to make kids eat this leafy vegetable in the form of side dish along with chapati or roti. But making paratha from these healthy greens will make it interesting and attractive. Dill paratha is very tasty and aromatic. This recipe is ideal for all age groups right from toddlers to elders especially for pregnant women .Top this healthy paratha with a dollop of butter or ghee and serve as breakfast along with curds and pickles, or enjoy nutritious Dill paratha for meals or dinner by dunking into a bowl of sambar or dal. Smear with Tomato sauce and pack it for lunch- box.

Ingredients Serving: 4

  1. 1 bunch of fresh Dill leaves (Suva/sabbasige/shepu)
  2. 1 large onion
  3. 1 ½ cups of Whole wheat flour (atta)
  4. 1 teaspoon red chili powder
  5. Salt to taste
  6. ¼ teaspoon Turmeric powder
  7. 2 Tablespoons Oil
  8. 1/2 cup water
  9. 1-2 teaspoons ghee (optional)

Instructions

  1. Wash and chop dill leaves and onions.
  2. In a wok heat a tablespoon of oil
  3. Add chopped onion, turmeric powder
  4. Add Salt to taste
  5. Fry until onion turns translucent
  6. Add chopped dill leaves and mix well
  7. Saute for 3 to 4 minutes
  8. The veggies will reduce to almost less than half its quantity when cooked.
  9. Mix whole wheat flour, red chili powder and salt together
  10. Add cooked onion-dill mixture to the dough
  11. Make stiff dough by adding water.
  12. Cover and keep aside for 15- 20 minutes.
  13. Then knead the dough by applying little oil to the palms
  14. Take small quantity of dough,
  15. Make a ball shape
  16. Dust it allover with wheat flour
  17. And roll into 6- 7 inch disc
  18. Apply oil over the surface and
  19. Transfer paratha to pre-heated griddle .
  20. Apply oil over the other surface
  21. Roast evenly on both the sides
  22. Shift to a serving plate and drizzle a spoon of ghee.
  23. Tasty Dill paratha is ready.
  24. Repeat the process and make paratha from the remaining dough
