ABOUT Suralichi wadi or Khandvi RECIPE

This is very tasty nutritious and protein rich dish, a little tricky but with the right measured ingredients surali wadi is very easy and fast to cook.

Ingredients Serving: 2

  1. 1 cup of bengal gram flour
  2. 1 cup of water
  3. 1 and 1/2 cup thick butter milk (It is good if it is home made)
  4. Salt to taste
  5. 1 tbsp of turmeric powder
  6. Chili powder as per taste
  7. For garnishing: coriander leaves and shredded coconut
  8. For tempering: 2 tbsp of oil
  9. mustard seeds 1 tsp
  10. cumin seeds 1 tsp
  11. Few curry leaves
  12. Hing powder a pinch

Instructions

  1. Take bengal gram flour, water and butter milk in a small pan, mix all the ingredients well and then add salt, turmeric and chilli powder (optional).
  2. Put the pan in a pressure cooker, close its lid and wait for 2 whistles. After that immediately remove the pan from pressure cooker. (Be careful as the pan will be very hot).
  3. Mix with a spoon (Since it is cooked from the bottom but the upper part is little uncooked, stir it well and again put it in pressure cooker). This time for only 1 whistle and immediately take out the pan.
  4. With the help of the spoon put the cooked khandvi batter on a greased plate and slowly spread it in the plate making it a thin layer. It is very important to get a thin layer (Remember to do it fast when the batter is hot).
  5. Make vertical cuts of 1 to 2 inch on the plate using a knife.
  6. Spread coriander leaves and shredded coconut and start rolling them. Make khandvi/surali wadi. Now make a tadka using curry leaves,mustard seeds, cumin seeds and hing.
  7. Pour the tadka just before serving.

wow. .surali wadi batter in cooker! ! grt idea.. I do it vin microwave or cook in a wik but dis seems interesting
