ABOUT Arabic Mashawi Chicken.. RECIPE

This succulent chicken is often barbecued on charcoal for the amazing extra flavour and smokiness. With the lemony flavour of sumac, it is often a crowd pleaser. It is a very popular Lebanese dish often enjoyed with garlic toum (garlic dip) and lots of salad alongside and pita bread. The marinade is exactly what makes it so delish. Ingredients Serving: 5

  1. 1.5 kg Whole chicken
  2. Salt 1 tbsp or more
  3. 2 tbsp Sumac
  4. 1 tbsp Ground cumin
  5. 1 tbsp Ground cinnamon
  6. 1 tbsp Cayenne pepper powder
  7. 1 tbsp Paprika
  8. 6-7 tbsp Hung curd
  9. Garlic cloves minced 6 to 7
  10. 5-6 tbsp Olive oil


  1. Make deep slits across the chicken.
  2. Marinate it with all the spices. Cover and leave it in the refrigerator overnight. This is important.
  3. Preheat the oven to 240 °.
  4. Heat a barbecue or chargrill pan to medium high and grill it for about 8 to 10 minutes until a bit charred turning it over every now and then. Baste it with oil before doing it.
  5. Transfer it to a lined baking tray and roast it until done.
  6. Serve it hot with Lebanese garlic sauce and pita bread or rice.
