ABOUT The Original Handi Gosht RECIPE

Mutton made the rustic way, in a mitti ki Handi.

Ingredients Serving: 6

  1. 1 kg mutton cut into small pieces
  2. 2-3 tbsp mustard oil
  3. 750 gm onions chopped
  4. 2 tbsp Ginger-garlic paste
  5. 3 red chillies, broken into two
  6. 4-5 cloves
  7. 3-4 cardamoms
  8. 7-8 black pepper corns
  9. 1 bay leaf
  10. A small stick of cinnamon
  11. 1/2 cup Buttermilk
  12. 1-2 tsp red chilli powder
  13. 2 tsp coriander powder
  14. Salt to taste
  15. A bunch of coriander leaves, chopped to garnish
  16. 1 cup whole wheat flour kneaded with water to make dough


  1. In a large Handi, add all the ingredients, one by one except the coriander leaves and the dough. Mix well.
  2. Put the lid on and seal with the dough.
  3. Put on low heat, ideally, over coal or upale.
  4. Let it cook for an hour and 15 minutes.
  5. Remove from fire. Let it cool for 10 to 15 minutes before removing the hardened dough.
  6. Check for doneness, adjust seasoning if required.
  7. Garnish with coriander leaves. Serve hot .
