Ingredients Serving: 6

  1. whole barley 1cup
  2. vegetables stock 3cup
  3. black olive 4/5 piece
  4. fresh asparagus 4stick
  5. sundried tomato (chopped) 1/4 cup
  6. fresh coriander 4/5 leaf
  7. olive oil 3tbsp
  8. white pepper ½tbsp
  9. balsamic vinegar 2tbsp
  10. berrys reduction 3tbsp
  11. salt as per taste
  12. lettuce leaves [a bunch]


  1. Soaked whole barley in a bowl for half an hour.
  2. Then boil the soaked barley with vegetables stock.
  3. Cut the black olives in a round figure and set aside.
  4. Cut asparagus in a small size and blanch with hot water.
  5. In a bowl mix olive oil, salt, black pepper, balsamic vinegar mix together with a hand whisk.
  6. After that, in a serving bowl mixed barley, balsamic vinegar mixture, asparagus, black olive, sundried tomatoes and berry's reduction.
  7. Take lettuce and coriander leaves, garnish the barley salad.
