ABOUT Jowar Buckwheat Cornflake Muffins - Gluten Free & Eggless RECIPE

These healthy muffins can be consumed by Pregnant women, Sr Citizens and health conscious folks. Rich in phosphorus, calcium, protein, iron and fibre , it aids sugar control , digestion, improves cholesterol levels, munch on these snacks or dessert anytime

Ingredients Serving: 6

  1. 3/4 cup Buckwheat Flour
  2. 3/4 cup Jowar(Sorghum) Flour
  3. 2 cups Regular/Special K/Multigrain Cornflakes cereals
  4. 5tbsp yoghurt
  5. 11/3 cup+1tbsp milk
  6. 11/2 tsp baking powder
  7. 1/2 tsp baking soda
  8. 4 tbsp canola or veg oil
  9. Salt a pinch
  10. 1/2 tsp vanilla essence(optional)
  11. 1/3 cup powdered sugar (optional)
  12. 2-3 tbsp chopped dates(optional)

Instructions

  1. Sieve flour, baking powder, soda, salt and sugar; set aside.
  2. Using potato masher, mash the cornflakes, you don't need to powder it, just mash it to finer flakes. keep it aside
  3. In a bowl, mix yogurt, oil and milk. Add essence, dates if required. Add corn flakes and mix well.
  4. Add the flour to cornflakes mix. Gently fold in all the ingredients. It will thick dense batter
  5. preheat the oven to 180. Fill the moulds to 2/3 . Bake for 15-20 minutes until its golden brown on top
  6. Allow it to cool. Serve warm or at room temperature
