FUSION OF AN INDIAN DESSERT RASMALAI WITH A KESAR FLAVORED SPONGE CAKE.

Ingredients Serving: 4

  1. For Rasmalai.
  2. Milk 500 ml
  3. Vinegar 1 tbsp
  4. For sugar syrup
  5. Water 5 cups
  6. Sugar 1 cup
  7. Rasmalai
  8. Milk 2 cups
  9. Kesar few
  10. Sugar 5 tbsp
  11. Kesar essence 1/4 tsp
  12. Pista few
  13. For cake
  14. Maida 3/4 cup
  15. Baking powder 1/2 tsp
  16. Baking soda 1/2 tsp
  17. Sugar 3/4 cup
  18. Curd 1/2 cup
  19. Milk 1 cup
  20. Icing
  21. Whipping cream 1 cup
  22. Kesar essence 1 tsp
  23. Yellow color

Instructions

  1. BOIL 500ML MILK. LET IT COME TO BOIL. ADD IB 1 TBSP OF VINEGAR TO BOILED MILK.
  2. STIR.
  3. CHENA SEPARATED OUT. NOW STRAIN IT.
  4. WASH CHENNA IN WATER SO AS TO REMOVE VINEGAR TASTE.
  5. REMOVE EXCESS WATER.
  6. MAKE SUGAR SYRUP. TO 5 CUPS OF WATER..ADD 1 CUP OF SUGAR. STIR.
  7. TAKE OUT CHENNA IN A THALI AND MASH IT WITH THE PALM.
  8. MAKE BALLS. MAKE SURE..THERE ARE NO CRACKS IN THE CHENNA.
  9. NOW DIP ONE BY ONE INTO CHASNI.
  10. CLOSE THE LID AND COOK ON MEDIUM FLAME FOR 10 TO 15 MINUTES
  11. CHENNA DOUBLED IN SIZE.
  12. PUT 2 CUPS OF MILK TO BOIL. ADD KESAR AND 5 TBSP SUGAR .
  13. ADD A PINCH OF YELLOW COLOUR .. FEW PISTA AND ALL MINI RASMALAI.
  14. RASMALAI IS READY.
  15. INGREDIENTS FOR BAKING A CAKE..
  16. SIEVE ALL DRY INGREDIENTS TOGETHER.
  17. SIEVED DRY INGREDIENTS.
  18. ASSEMBLE ALL THE WET INGREDIENTS.CURD 1/2 CUP MILK 1 CUP OIL 1/2 CUP
  19. WHISK THEM.
  20. WHISK FOR 4 MINUTES.
  21. PREHEAT OVEN AT 180℃ FOR 10 MINUTES.
  22. ADD HALF DRY INGREDIENTS FIRST TO THE BATTER.
  23. ADD REST.
  24. ADD MILK.
  25. WHISK FOR 7 MINUTES.
  26. APPLY BUTTERPAPER AT THE BASE OF 5 INCH PAN.
  27. ADD BATTER TO CAKE TIN
  28. BAKE FOR 30 TO 35 MINUTES.
  29. CAKE STARTED TO RISE.
  30. CAKE BAKED. PRICK A SATTE STICK..IT WILL COME OUT CLEAN.
  31. ASSEMBLE ALL THINGS.
  32. ICEBATH.. TAKE A BIG VESSEL. FILL IN CHILLED WATER AND ICE CUBES. PUT THE VESSEL OF CREAM IN IT.
  33. START WHISKING AT LOW SPEED FIRST. AD 1 TSP OF YELLOW COLOR TO WHIPPING CREAM. ADD 1 OF KESAR ESENCE
  34. WHIP TILL SOFT PEAK STAGE.
  35. PUT A LITTLE CREAM ON BOARD. SLICE ALL THE LAYERS OF CAKE. PUT FIRST LAYER.
  36. ADD RASMALAI MILK.
  37. ADD CREAM.
  38. SPREAD CREAM.
  39. PUT RASMALAI.
  40. COVER WITH SECOND LAYER..
  41. AGAIN REPEAT SAME PROCESS. PUT ON THIRD LAYER..
  42. PUT ON LAST LAYER. APPLY CREAM AND FLATTEN IT.
  43. APPLY CREAM ON SIDES AND AGAIN FLATTEN IT.
  44. FILL CREAM IN A PIPING BAG WITH A STAR SHAPED NOZZLE
  45. MAKE ROSETTES.
  46. PUT RASMALAI
  47. GARNISH WITH KESAR PISTA AND ROSE PETALS
