Ingredients Serving: 4

  1. 1 cup spinach leaves tightly packed
  2. 200 gms mushroom
  3. 1 green chili chopped (increase for spiciness)
  4. 1 onion roughly chopped
  5. 1tomato roughly chopped
  6. 1/2 tsp grated ginger
  7. 2-3 garlic cloves minced
  8. 1 tsp garam masala
  9. 1/2 tsp coriander powder
  10. 1 tsp cumin seeds
  11. 1/2 tsp red chilli powder
  12. 6-7 cashews(optional)
  13. Salt to taste
  14. 1 tsp kasuri methi

Instructions

  1. Soak cashews in 2 tbsp hot water for 20-30 minutes. Make a paste
  2. Clean and roughly chop spinach leaves
  3. Take 1tbsp oil in a pan, add green chillies, Ginger garlic and onion. Saute until Raw aroma goes away and onion are translucent
  4. Add tomatoes and cook until tender. Add spinach leaves, stir fry until spinach leaves wilt. Switch off. Allow to cool and make a Puree
  5. In same pan, add 1 tbsp oil, add cumin and allow to crackle..add mushroom. Saute for 2-3 minutes. Add red chilly powder, coriander powder and saute for 2 minutes. Add Spinach puree and cashew paste. Add water to adjust the gravy consistency
  6. Cover and cook for 3-4 minutes. Add salt and garam masala. Cook for 2-3 minutes. Crush kasuri methi between palms. Add and mix well. Cook for a minute , switch off. Serve hot with rice or roti
