ABOUT Palong shak er ghonto (spinach with veg) RECIPE

This is a typical bengali side dish, generally served with some dal rice.

Ingredients Serving: 3

  1. Spinach - 3 cups, chopped
  2. Potato - 1, cube
  3. Eggplant - 1 handful
  4. Hyacinth beans/sheem - 5, chopped
  5. Pumpkin - 1/2 cup
  6. Radish - 1, medium, thin slice
  7. Ridge gourd/jhinge - 1, small, cube
  8. Dry red chilli - 2
  9. Green chili - 2, broken
  10. Turmeric powder - 1 tsp
  11. Nigella seeds - 1 tsp
  12. Dried lentil dumplings/Bari - 8 pieces
  13. Cumin powder - 1 tsp
  14. Coriander powder - 1 tsp
  15. Roasted panch phoron powder - 1 tsp
  16. Red chilli powder - 1 tsp
  17. Sugar - 1-2 tsp
  18. Salt

Instructions

  1. Shallow Fry dried lentil dumplings separately. Heat oil, add nigella seeds, red & green chili
  2. Add all veggies except spinach, cook for 5 min
  3. Add all the powder, mix well
  4. Add spinach, lentil dumplings, cook for 15 min
  5. If spinach doesn't release enough water, add some water
  6. Add sugar, mix well
