ABOUT Egg curry... RECIPE

Egg...a good source of protein & calcium.The curry looks spicy but I have used vegetable juice for colour, so its not so spicy but healthy.During pregnancy it can be a good side dish.

Ingredients Serving: 3

  1. Egg...4
  2. Boiled potato...4
  3. Onion paste..1tspb
  4. Ginger garlic paste...1
  5. Tomato..1
  6. Beetroor juice...5tspn
  7. Carrot juice..5tspn
  8. Turmeric powder...1tspn
  9. Red chilli powder..1tspn
  10. Coriander leaves

Instructions

  1. Boil egg first.
  2. Boil potato.
  3. Heat oil, add turmeric powder & red chilli powder & fry the eggs in it.
  4. Take out the eggs & fry the boiled potato for few mins.Keep aside.
  5. Add cumin seeds in the same oil & let it crackle.
  6. After few mins add onion paste,ginger garlic & tomato paste.Fry it for few mins.
  7. Add fried eggs & potatoes.
  8. Add beetroor & carrot juice, salt & turmeric powder.Within few mins colour will change.Cover it & cook it well.
  9. After 10 mins adjust salt & add coriander leaves.
  10. Its ready now .Serve it with roti or rice.
