ABOUT Apple Fish RECIPE

This healthy oil free recipe is very easy to make, and since Pomfret does not have very thick flesh, it cooks in a jiffy and the results are simply delicious ! The sourness of green Apple gives the fish a nice tangy flavour.

Ingredients Serving: 2

  1. 2 Butter fish / Pomfret/ White Pomfret
  2. 1 Green Apple
  3. 1 bowl of fresh Mint leaves
  4. 1 bowl of fresh coriander leaves
  5. 3-4 cloves of Garlic
  6. 1 inch piece of ginger
  7. 2 green chilies
  8. 2 banana leaves for steaming it
  9. 1/2 tsp sea salt for marinade and 2-3 tsp for rubbing the fish
  10. 1 tsp fresh lemon juice

Instructions

  1. Clean the fish thoroughly, take some salt and rub it generously over them and leave for 8-10 minutes. Wash with fresh water.This is to remove any sliminess and the fishy stench from the fish and to make it soft and wonderfully receptive to marinade.
  2. While the fish is resting in its salty rub, we can make the marinade. Grate the green apple using a grater. Make a green chutney by adding fresh mint leaves, coriander leaves, ginger, garlic chili , sea salt and lemon juice in a grinder.
  3. Mix the grated apple and green paste and stuff it nicely in the cuts of the fish from all the sides. Marinate the fish at least for 15-20 minutes.
  4. Cut the banana leaf into 2 inch sheets large enough size to wrap the fish individually. Grease the leaf with a drop of oil and place the fish in the center of the leaf and wrap. Seal the fish in this banana envelopes using toothpicks.
  5. To steam the fish, place the wrapped fish directly in a bamboo steamer (or other type of steamer), seam-side up for 7-8 minutes.
  6. You can also place the wrapped fish on a pan over a stove top on low flame for 3 minutes and then carefully flip the envelope and cook for another 2 minutes.
  7. If using a microwave oven, simply place the wrapped fish on the microwave rotating plate and set time for 4 minutes.
  8. Serve instantly for best taste.
