ABOUT Papdi Gathiya Farsan... RECIPE

Papdi gathiya, Dhokla and Faafda are some of the most famous breakfast items or Farsan (as they are popularly called) from the North Western Indian State Of Gujarat. It is usually served with carrot chilli sambharo or farsan chutney.

Ingredients Serving: 10

  1. Gram flour or besan 1 cup
  2. Papad khar 1/8th tsp
  3. Salt 1/2 tsp
  4. Asafoetida 1/8th tsp
  5. Oil 1/4th cup
  6. Water 1/4th cup
  7. Blackpepper powder 1 tsp
  8. Turmeric 1/2 tsp

Instructions

  1. Dry roast the papad khar and salt for a minute.
  2. Add these to a bowl along with the oil and water.
  3. Using a hand held beater, blend until a thick white emulsion is seen.
  4. Add chickpea flour to it along with turmeric and asafoetida.
  5. Make a smooth dough out of it.
  6. Using a sev press with a papdi attachment or a traditional jhara, drop them in hot oil.
  7. Fry in hot oil on a medium high heat until crisp and golden in colour.
  8. Serve them hot with carrot chilli sambharo or farsan chutney.
  9. I served them with fried curd chillies and fried curry leaves . They tasted so yum.
