They say go big or go home. And the perfect way to end a memorable meal is to gorge on a dessert pack with big flavours. This Sticky Toffee Pudding does exactly that for you. Doused in a delicious salty toffee sauce, one bite in and the moist pudding will teleport you to sweet sweet heaven.

Ingredients Serving: 2

  1. Boiling Water – 1/2 cup
  2. Dates – 60 g, pitted and chopped finely
  3. All Purpose Flour – 1/2 cup
  4. Baking Powder – 1/4 teaspoon
  5. Baking soda – 1/4 teaspoon
  6. Salt – 1/8 teaspoon
  7. Butter – 1.5 tablespoon
  8. Dark Brown Sugar – 1/4 cup
  9. Eggs – 1
  10. Vanilla Extract – 1/2 teaspoon
  11. Cocoa Powder – 1/2 teaspoon
  12. Unsalted butter – 57 g
  13. Dark Brown Sugar – 1/2 cup
  14. Heavy Cream – 1/2 cup
  15. Cinnamon Powder – a tiny pinch
  16. Salt – 1/2 tsp

Instructions

  1. Preheat your oven to 175 degrees Celsius. Soak the dates in the water. In a bowl, mix the flour, baking powder, baking soda and salt.
  2. In another bowl, beat butter and brown sugar until soft. Incorporate the eggs one at a time.
  3. Then add the soaked, softened dates into the mixture. Stir in the flour mixture into the batter until flour streaks are no longer seen. Add vanilla extract and cocoa powder and mix.
  4. Divide the batter into the greased cups of a muffin pan and pop them into the oven. Bake for about 16-18 minutes or until a toothpick inserted comes out clean.
  5. In a skillet, melt remaining butter and brown sugar on low heat. Once melted, gradually add in the heavy cream while stirring continuously until the sauce becomes thick.
  6. Add in the cinnamon powder and salt and bring to a boil. Once it bubbles, take it off the heat.
  7. When you're ready to serve dessert, place the pudding and the sauce in the microwave oven on medium heat for about 30 seconds, until just a bit warm.
  8. Then pour the sauce over the pudding and serve immediately.

You have written 1 egg in the ingredients and in method you have mentioned add eggs one at a time.....so how many eggs actually go in the pudding? The pudding looks so yummy!
