Now this is a real special cake for me as I introduced a lovely secret ingredient of salted caramel alongwith some milk to make a buttery milky caramel sauce. Boozy rich plum cake with lots of rum soaked fruits and candid peels, keeping its authenticity and is eggless too. Spice powders add the perfect spicyness to the rich cake. It's an easy bake made with the yummy sauce content and a little fruits soaking done well in hand to make things quicker. Don't miss trying it this festive season. Stays fresh and good at room temperature for 2 to 3 days. You can refrigerate it for longer preservation.

Ingredients Serving: 6

  1. Whole wheat flour - 1 cup
  2. Apf/ maida - 3/4 cup
  3. Cornflour - 2 tbsps
  4. Fruits soaked in rum - 1 cup
  5. Spice powders :
  6. Cinnamon - 1/2 tsp
  7. Cloves-1/2 tsp
  8. Ginger-1/2 tsp
  9. Pepper - 1/2 tsp
  10. Nutmeg - 1/4 tsp
  11. Buttery milky caramel sauce :
  12. Sugar - 1 cup
  13. Water-1/2 cup
  14. Butter- 5 tbsps
  15. Fresh cream- 2 tbsps
  16. Milk - 1 cup
  17. Vanila essence - 2 tsps
  18. Honey-1 tbsp
  19. Lemon rind - 1/2 tsp
  20. Other Ingredients :
  21. Fine sugar - 1/2 cup
  22. Baking powder - 2 tsps
  23. Baking Soda - 1/2 tsp
  24. Salt - 1 pinch

Instructions

  1. Caramalize sugar with water till nice brown colour and every bit of sugar is dissolved. Add butter and cream. stir well.
  2. Add the milk and heat at the lowest flame.
  3. Take the liquid off the fire add lemon rind and let it cool.
  4. In the meanwhile seive the flours with salt and all the spice powders. Do it 2 to 3 times from a good height to incorporate as much air as possible.
  5. Now add the oil, vanilla essence and honey to the cooled buttery caramel milk. Whisk well.
  6. Add baking powder and baking soda to this liquid mixture. Mix gently and keep aside for 10 minutes. Let it froth .
  7. Mean while preheat your microwave convection to 200 °
  8. Now start adding the flour to the liquid mixture in small batches and gently fold in.
  9. Add a cup of soaked fruits, drained from the rum then dust with flour and then fold in the batter.
  10. Add the fine sugar and give a final mix. Pour the batter in a prepared loaf pan or round 8 "pan as desired.
  11. Reduce the temperature to 160 and bake for 60 minutes
  12. Do check in the last 10 minutes for doneness.
  13. Remove. Let it cool completely for a clean cut. Cut with a serrated knife.
  14. Soaking fruits: *Mixture of broken nuts and berries like cashews, almonds, dried cherries, cranberries, dates, candid peels *1 cup rum *Add as much fruits as you can to cover with rum *(makes a huge quantity which can be used for upto 3 cakes) *can soak for 24 hours or months before. *if not interested in rum soaked fruits try soaking in fresh orange juice for a night. *not interested in soaking fruits then add chopped fruits dusted with flour directly to the batter.
