Ingredients to make Margarita cupcakes

  • 1-½ cup All-purpose Flour
  • 1tsp baking powder
  • 1tsp baking soda
  • 1/2tsp salt
  • 1/2 cup Canola oil
  • 3/4 cup sugar
  • 2 eggs at room temperature
  • 1/2 cup lime juice
  • 1tbsp lime zest
  • 2tbsp tequila , divided
  • 1tsp vanilla extract
  • 1/2 cup sour cream

How to make Margarita cupcakes

  1. Preheat oven to 180c.
  2. Grease a 12 count muffin mould and set aside.
  3. In a large bowl, sift flour, baking powder, baking soda and salt. Mix well and set aside.
  4. In the bowl of an electric mixer fitted with the paddle attachment, mix canola oil and sugar on medium-high speed until well combined.
  5. Reduce the speed to medium and gradually eggs until just mixed.
  6. Add lime juice, zest, tequila and vanilla extract.
  7. Continue mixing.
  8. Slowly add half the flour mixture and mix until blended.
  9. Add sour cream and mix again
  10. Now add remaining flour mix and blend again.
  11. Divide batter into muffin moulds
  12. Bake for 15-18 minutes.
  13. Transfer the muffins to wire rack when still warm
  14. Now brush the remaining tequila over the muffin tops
  15. Let cupcakes cool completely
