Ingredients Serving: 4

  1. 1/2 kg ripe red tomatoes
  2. 100gm carrots
  3. 100gm beans
  4. 100gm turnips peas
  5. 100gm potatoes
  6. 2 onions
  7. 3-4 pods of garlic
  8. 1/2 bunch coriander leaves
  9. 100gm pasta (any kind)
  10. 100gm red kidney beans (rajma)
  11. 1 tablespoon of butter
  12. Salt to taste

Instructions

  1. Wash the tomatoes and let them blanch by boiling it in water. Boil the tomatoes for 2 minutes, then plunge them in cold water. Once the skins immediately come off, chop them and keep aside.
  2. Next finely chop the onions, crush the garlic, chop the coriander leaves and cube all the vegetables.
  3. Take a large pan and heat 1 tablespoon of butter, then add in the garlic and stir till slightly brown in colour.
  4. Next add in the onions and cook till they become translucent. Then put in the coriander leaves, vegetables, pasta, red beans and tomatoes. Add in enough water to cover the vegetables and salt to taste.
  5. After the soup comes to boil, lower the heat and let it simmer to cook for 50 to 60 minutes.
  6. Continue stirring from time to time in between this time and add water if required.
  7. This delicious soup can be prepared in the pressure cooker, but the slow cooking method always adds more flavour.
  8. Serve warm with bread.
