ABOUT Eggless Cashew Marzipan RECIPE

An easy, no-cook, traditional Goan Christamas sweet which usually uses almond extract. Try this with rose water, it has a peculiar delicious Indian taste and aroma!

Ingredients Serving: 20

  1. 350 gms Cashew nuts
  2. 200 gms Powdered sugar
  3. 2-3 tbsp water
  4. Food coloring (optional)
  5. My secret ingredient- 2 tsp rose water

Instructions

  1. Grind the cashews to a fine powder and sieve it. if you have some large chunks left, grind them again
  2. in a large mixing bow, mix the sugar and cashew powder. Add the rose water.
  3. Add water one tablespoon at a time, mix well until a smooth dough forms. Use only enough water to make it come together
  4. Divide the dough into 2-3 parts to add different food coloring. I added pink, yellow and green
  5. Once the dough is ready, you can use silicon moulds and mould them into different shapes or else shape them with your hand into desired shapes
  6. Leave it overnight to dry. Store in an airtight container for upto 3 weeks at room temperature.
