Ingredients Serving: 5

  1. For biryani masala:
  2. 1 black cardamom
  3. 1 teaspoon cumin seeds
  4. 15-20 peppercorns
  5. 8-10 cloves
  6. 1 inch piece Cinnamon stick
  7. For veggie masala:
  8. 1 tablespoon ghee
  9. 1/2 cup carrots(diced)
  10. 1/2 cup peas
  11. 1 cup sliced onions
  12. 1 cup cauliflower florets
  13. 2 tablespoon green chilli (diced)
  14. 1 cup curd
  15. 1 tablespoon ginger garlic paste
  16. 2 tablespoon water
  17. Salt(to taste)
  18. 1/2 teaspoon turmeric powder
  19. 1/2 teaspoon red chilli powder
  20. 1 bayleaf
  21. 4-5 cloves
  22. 1 inch cinnamon stick (in small pieces)
  23. 1 tablespoon butter
  24. 1 tablespoon ghee
  25. 5-6 saffron strands
  26. For rice:
  27. 1 cup basmati rice
  28. 3 cups water
  29. For assembling layers:
  30. 1 cup chopped coriander leaves
  31. 1 tablespoon green chilli (diced)
  32. 1 tablespoon ginger juliennes

Instructions

  1. TAKE BASMATI RICE. SOAK FOR 2 HOURS.
  2. TAKE PEPPER CORNS, BADI ELAICHI, CLOVES, CUMIN SEEDS AND CINNAMON STICK. DRY ROAST THEM.
  3. HEAT GHEE IN A PAN. ADD CINNAMON STICK, CLOVES AND BAY LEAF.
  4. ADD ONIONS AND SAUTE.
  5. TAKE GINGER GARLIC PASTE IN 2 TABLESPOON WATER AND MIX WELL.
  6. ADD WATER DISSOLVED GINGER GARLIC PASTE TO ONIONS.
  7. GRIND THE ROASTED MASALAS AND THE BIRYANI MASALA IS READY.
  8. WHEN THE ONIONS & GINGER GARLIC PASTE SAUTEED WELL, TAKE IT OFF FROM GAS AND ADD CURD TO IT.MIX WELL
  9. AGAIN PUT IT ON GAS.
  10. ADD CARROTS, POTATOES, PEAS, GREEN CHILLI AND CAULIFLOWER
  11. ADD SALT, RED CHILLI POWDER AND TURMERIC POWDER.
  12. ADD BIRYANI MASALA AND MIX WELL.
  13. ADD HALF CUP WATER AND COOK COVERED.
  14. BOIL RICE UPTO 90% BY ADDING SUFFICIENT WATER.
  15. IN ANOTHER PAN, HEAT BUTTER, GHEE AND SAFFRON STRANDS.
  16. ADD THIS MIX TO COOKED VEGGIES.
  17. MIX WELL.
  18. TAKE A THICK BOTTOMED PAN. ADD A LAYER OF RICE.
  19. ADD A LAYER OF VEGGIES. ADD SOME CHOPPED CORIANDER.
  20. AGAIN ADD A LAYER OF RICE, VEGGIES OVER IT AND THEN SOME CHOPPED CORIANDER LEAVES.
  21. COVER IT WITH ANOTHER LAYER OF RICE.
  22. TOP IT UP WITH CHOPPED CORIANDER LEAVES, GREEN CHILLI AND GINGER JULIENNES.
  23. COVER THE LID PROPERLY WITH DOUGH AND PUT IN ON SIM GAS FOR 10 MINUTES TO GIVE DUM.
