Inspired from Vasantha Moorthy's cookbook, this is a catch all rice recipe. Though the list of ingredients may seem long, most of it are pantry staples. If you are using frozen mixed vegetables, then its an absolute breeze to make this.
To make it cook ....rice can b cooked with bit less water in microwave.....place dem under cold running water....n drain all d excess water......
Soak rice for at least 30 minutes. Then cook it and keep aside. You can use 3 cups of water for 2 cups of rice. (One whistle in pressure cooker or use a rice cooker. ) Then let the rice cool a bit.
Cut the vegetables into small pieces. Cook with enough water or steam cook the carrot, beans, green peas and cauliflower. Once done, drain and keep aside. Chop the onions (or spring onions) and chillies.
Heat 2 tsp oil in a pan and saute the onions and chillies till they are done. Once the onion turns brownish, add the cooked vegetables. Then add the ketchup, soya sauce, chilli sauce, vinegar, salt and pepper. Mix carefully until well combined.
Add the cool cooked rice. Mix well and take it off the heat.
Serve hot for best taste.

Very good recipe, but i think its better to fry the veggies n let it get cooked there in oil itself, it will taste well.
