Rice and milk based indian dessert

Ingredients Serving: 4

  1. Rice flour 250 gms
  2. Milk 1 liter
  3. Sugar 150 gms
  4. Green cardamom powder just a pinch
  5. Coconut (chopped) 20 gms
  6. Khoya 100 gms
  7. Cashew nut 10
  8. Raisins 10
  9. Carrot paste 50 gms
  10. Butter 15 gms
  11. Honey 2 tbsp
  12. Water as required

Instructions

  1. Make a thick batter of rice flour with water in steel container cover with a lid and rest it for an hour.
  2. Peel the carrot and cut into small pieces and puree it in a mixer.
  3. Now take a frying pan put some butter and let it melt, add carrot puree and saute for 5-7 minutes.
  4. Now divide the prepared batter in two portions in two separate container. In one portion add sauteed carrot puree and mix well and keep aside.
  5. Heat milk in a container and boil till it starts thickening.
  6. Add green cardamom powder, dry fruit and some chopped coconuts and cook for some time.
  7. Turn off the flame and keep aside.
  8. Put an iron griddle on flame, and put one laddle of batter on it and make small round shape,"pua" covered with a plate cook on slow flame.cook on both sides. it should not change colour. it should be white.
  9. Repeat same process for carrot paste batter. When done remove from the flame.
  10. Dip the two prepared pua in the flavoured milk and leave for an hour in the milk.
  11. Take it out from the milk and give the desired shape with a mould.
  12. Put it on a plate and garnish with khoya, cashewnuts, raisins and at the end pour honey and saffron on it. Serve chilled.
