Ingredients Serving: 3

  1. Almond flour- 40g
  2. Erythritol - 35g
  3. Melted Butter - 1 tbsp
  4. Egg- 1
  5. Baking Soda - 1/2 tsp
  6. Salt - pinch
  7. Spinach paste - 1/4c or 12 leaves
  8. Vanilla extract- 1/2 tsp
  9. Coconut milk- 1 tsp
  10. Melon seeds- 1 tbsp (optional)


  1. Make paste of spinach with the Coconut milk.
  2. Mix dry ingredients in a bowl.
  3. Beat Egg in a bowl using a whisk or fork.
  4. Now add wet ingredients to egg and mix well.
  5. Add dry to wet ingredients and mix.
  6. Fill in 3/4 the of the cupcake liners and top it with melon seeds if using.
  7. Bake in preheated oven for 15-20 min until toothpick inserted comes out clean.
