It's a cake using shredded zucchini for christmas party, as per theme a secret ingredient is zucchini used here, u might have not heard of making a sweet cake using vegetable but here is the surprise, must try and make out this yummilicious eggless zucchini cake

Ingredients Serving: 6

  1. 1 Cup Vegetable oil
  2. Pinch of salt
  3. 1 teaspoon baking powder
  4. 1 cup sugar
  5. Few drops vanilla essence
  6. 2 cups maida
  7. 2 cups shredded zucchini
  8. Chopped almonds and Kishmish
  9. water 2 tablespoon (for caramel,see in method)
  10. sugar 2 tablespoon (for caramel,see in method)


  1. In a large bowl, mix together the oil, sugar, vanilla essence with a beater till well blended
  2. Sieve maida and baking powder, keep aside
  3. Put the sieved maida baking powder mixture with salt to the above beated oil sugar essence mixture
  4. Fold in zucchini and dryfruits, mix well
  5. Pour into the greeced aluminium tin, put caramelized kishmish on top and bake it for 25-30 minutes in the preheated oven at 180 degree
  6. Note 1) Greece the aluminium tin with oil and then dust it with maida after that pour the mixture and then keep it for baking
  7. Note 2) Take 2tablespoon water plus 2tablespoon sugar in a pan, heat on sim flame till sugar gets caramelized, then immediately put some Kishmish, so that it turns into dark brown, we have to use this caramelized Kishmish on top of cake for decorating while baking
  8. Note 3) Inside we can put direct almonds and Kishmish rapped in maida but on top we will use caramelized Kishmish.
