ABOUT Stir- Fried Purple Potatoes RECIPE

The most eye appealing dinner consisting of stir fried purple potatoes with roasted Cornish hen and freshly pickled red onion and Red Wine. Right amount of carb and proteins packed with flavor.

Ingredients Serving: 2

  1. Baby purple potato - 1 lb
  2. Garlic- 6 -8 flakes
  3. Red chili flakes- 1/2 tsp or more
  4. Fresh Italian parsley - few strands
  5. Fresh rosemary - 1 sprig
  6. Salt and pepper to taste
  7. olive oil - 1 tbsp

Instructions

  1. Wash and scrub the potatoes well. Steam it until 3/ 4 th cooked. Remove and allow it to cool. Cut into half.
  2. Heat oil in a pan and add the garlic chopped when it gives out a good aroma add the chili flakes give it few seconds then add the potatoes cut salt and pepper and rosemary chopped.
  3. Reduce heat to low and continue cooking until potato is fully done and edges are crisp
  4. Before switching off flame add parsley chopped and give it a gentle toss so the potato does not mash up.
  5. Serve the stir fried purple potatoes with roasted Cornish hen and freshly pickled red onion and Red Wine.
