ABOUT Tawa Baingan Masala... RECIPE

An interesting brinjal or egg plant delicacy made in my home town. The eggplants used here in this recipe are the green colour ones that are available in the markets. These pretty looking little cute eggplants are shallow fried in a pan with some selected spices and kasoori methi along with onions. A tantalizing side dish to your favourite mealtime with your loved ones. Happy Cooking !!!!!!

Ingredients Serving: 5

  1. Green eggplants 400 gm
  2. onions sliced thinly 3
  3. salt 1 tsp
  4. ginger garlic paste 1 tsp
  5. Red chilli powder 1 tsp
  6. Green chillies chopped 2
  7. turmeric 1/2 tsp
  8. Kasoori methi 1 tbsp
  9. Dry mango powder 1/2 tsp
  10. coriander leaves chopped 2 tbsp
  11. oil 3 tbsp


  1. Wash and cut the eggplants lengthwise into thin strips.
  2. Immerse them in some salt water to retain their colour.
  3. The salt water will prevent them from losing their colour.
  4. In a pan, heat oil and saute the onions until translucent.
  5. Add the ginger garlic paste and the green chillies now.
  6. Saute it for a minute.
  7. Add the rest of the spices now.
  8. Followed by the eggplant strips.
  9. Cover and simmer on low heat for 15 to 20 minutes.
  10. Add little water before closing the lid if required.
  11. Do not add much water.
  12. Open the lid and add the kasoori methi.
  13. See to it that they are nicely done and oil starts separating from the sides.
  14. Garnish with lots of coriander and saute it for a minute or two before switching off the heat.
