Ingredients Serving: 3

  1. 1 tsp butter or ghee
  2. 1 tomato
  3. 1 large onion for frying
  4. 1 cup chopped mint + coriander leaves
  5. Mixed Vegetables (5-6 mushroom, 2 carrot, 1 potato, 1 bunch broccoli)
  6. 2 tbsp biryani masala
  7. 2 tbsp yogurt
  8. 1/4 tsp turmeric
  9. 1/8 tsp garam masala
  10. 1 tbsp ginger garlic paste
  11. Salt as per taste
  12. 1/2 to 3/4 cup of wheat flour (Kneaded to a dough)
  13. 1 3/4 cup rice soaked in water for 15 minutes
  14. 1 cardamom
  15. 1/2 bay leaf
  16. Turmeric 1/4 tsp
  17. Salt as required

Instructions

  1. Deep fry the onions after chopping lengthwise. Drain excess oil on paper towels. Keep aside.
  2. Wash the vegetables and chop into big pieces. Keep aside.
  3. Add yogurt, salt, turmeric, garam masala and biryani masala to the vegetables.
  4. Give a stir and keep covered in the fridge for 15 minutes.
  5. Add wheat flour with little water and make it to chapati dough, keep aside.
  6. Add enough water to a deep pan, add bay leaf and cardamom to the water.
  7. Add enough salt and turmeric to the water.
  8. When the water is boiling, add in the soaked rice.
  9. When the rice breaks in to three parts, drain the excess water using a colander and keep the rice aside.
  10. Add butter and 1 tsp oil to the bottom of the 'dum' pan.
  11. Add chopped tomato and fry for some time until they are juicy. Next add in and fry ginger garlic.
  12. Add in the marinated vegetables on the bottom layer.
  13. Next, add one layer of rice then fried onions.
  14. Finally add chopped mint and coriander leaves.
  15. Then again add a layer of rice, fried onions and mint /coriander leaves.
  16. Roll the chapathi dough to thin strip and cover the lid of dum pan with the dough.
  17. Cover with lid and keep in 200 degree centigrade oven for 15 minutes reduce the heat to 150 degrees and keep for another 20 minutes.
  18. Take it out and mix gently. Dum biryani is ready to be served.
