ABOUT Coconut Cream Margarita RECIPE

A tropical twist to the Margarita from 'Gods Own Country', a cross between a Margarita and a Pina Colada.

Ingredients Serving: 2

  1. Tequila/vodka 1 cup
  2. Fresh Lemon juice 1/2 cup
  3. Honey 2 tbsp
  4. Cointreau 1/4 cup (optional)
  5. Ice 1 cup
  6. Coconut cream 1 cup (unsweetened)
  7. Grated coconut 1/2 cup
  8. Salt as required
  9. Chilli flakes two pinches

Instructions

  1. Place a non stick pan on a medium flame. Toss in the grated coconut and dry roast it to a golden brown colour. Spread on a plate to cool.
  2. Choose two cocktail glasses, rub the edges with a slice of lime. Then dip the glasses into a plate of salt and the roasted coconut.
  3. Add the tequila/vodka, lemon juice, Cointreau, honey and ice into a blender and mix well. Pour into the prepared cocktail glasses.
