ABOUT Tikka boti kebab RECIPE

Chunks of lamb meat marinated with spices and grilled to perfection.

Ingredients Serving: 3

  1. 500 gms lamb meat(cut into cubes)
  2. 1 tbsp - raw papaya paste
  3. 1/2 tsp - red chilli powder
  4. 1 tsp - garam masala
  5. 1/2 tsp - coriander powder
  6. 1 tsp - roasted cumin powder
  7. 1 tsp - roasted gram flour (Besan)
  8. 1 tsp chat masala
  9. 1 tsp - oil for marinating + for basting
  10. Salt to taste
  11. A piece of charcoal
  12. 1 tsp ghee

Instructions

  1. Wash and pat dry mutton. Marinate mutton with the above spices including oil.
  2. Leave to rest preferably overnight or for at least 2 hours. Arrange the pieces of mutton on a metal skewer and roast on an open gas flame until tender.
  3. This takes 10 to 15 minutes. Meanwhile heat charcoal until red hot. Place the skewer in a plate or a bowl.
  4. Place the charcoal on a piece of aluminium foil and drizzle ghee over it . Cover with a lid so that smoke does not escape.
  5. This will give the smoky effect. Serve with green chutney, salad and lemon wedges.
