ABOUT Fudgy Brownies with Honey Toasted and Spiced Almonds RECIPE

I am not a big fan of chocolate cake but boy I do love a fudgy brownie with a crusty top layer and crunchy nuts. This brownie recipe makes the perfect fudgy brownies with a crusty upper layer that you want with a brownie. Its made with cocoa powder,butter,flour,eggs, melted chocolate and of course my secret ingredient coffee powder. The almond topping has the secret spice cinnamon and adds a extra crunch to the dish. This recipe contains 75% dark chocolate which is slightly on the bitter side. If you are not a fan of dark chocolate you may use semi sweet chocolate and decrease the amount of sugar accordingly. You may also want to increase the butter in that case as semi sweet chocolate contains less cocoa butter than dark chocolate. However these brownies are not bitter and they taste lovely and chocolatey and not too sweet. But if you have a sweet tooth go for semi sweet chocolate. Also if you are using salted butter skip the salt in the brownie recipe.

Ingredients Serving: 3

  1. For the Brownies:
  2. Maida/ Plain flour - 55 grams
  3. Sugar -120 grams
  4. Cocoa powder - 16 grams
  5. Instant coffee powder -5 grams
  6. Eggs -2
  7. Unsalted Butter - 60 grams
  8. Salt - one generous pinch
  9. 75% Dark Chocolate - 90grams
  10. For the Almond topping:
  11. Almonds -25 grams
  12. Honey - 1 teaspoon
  13. Sugar - 1/2 teaspoon
  14. Salt -1/2 teaspoon
  15. Cinnamon powder- 1 generous pinch

Instructions

  1. For the brownie:
  2. Keep all your ingredients ready.
  3. Melt the butter and sugar over low heat in a wide bowl. Once melted set aside.
  4. Chop the chocolate roughly and melt it over a double boiler. Once fully melted set aside.
  5. Set oven to preheat at 150 degree Celsius for ten minutes. Line a baking tin with butter paper and keep ready.
  6. Beat eggs in hand mixer in medium speed for about two minutes till light in color. If using a whisk about three to four minutes.
  7. Add this egg mixture to the butter and sugar mix and continue beating for about a minute till everything is well mixed.
  8. Add in the flour, salt and just fold through the mix using a spatula. Don't beat.
  9. Fold in the cocoa powder and coffee powder.
  10. Fold in the melted chocolate. The batter will be quite thick don't worry.
  11. Pour this into the baking tin lined with butter paper.
  12. Bake in oven at 150 degree Celsius for 20-25 minutes till the brownie achieves a crusty top and is well cooked inside. Check with a knife or tooth pick in the centre.
  13. Take it out and let cool on a wire rack. I like my brownies a little warm so I don't let them completely cool down. Just until they are warm. Meanwhile make the almond topping.
  14. For the Almond topping:
  15. Preheat oven to 150 degree Celsius. I made these just after the brownies and kept the mix ready for toasting immediately after the brownies came out so I didn't preheat again.
  16. Chop almonds roughly.
  17. In a non stick pan, heat honey over low heat till liquidiy.
  18. Add the almonds to the pan and mix.
  19. Sprinkle the cinnamon powder and mix. Take off heat.
  20. Spread over a baking tray lined with parchment paper and bake for five minutes at 150 degree Celsius.
  21. Take it out and sprinkle salt and sugar on top.
  22. Now it's time for serving up!
  23. Slice the brownies into squares and place the toasted almonds on top. If needed you can add a scoop of ice cream too! Enjoy!
