There was a long cherished desire to bake an eggless cake. The desire manifested by baking this awesome orange cake. It has a very refreshing taste and the cranberries and prunes soaked in brandy enhance its taste. It is fragrant and moist and does not need any icing..

Ingredients Serving: 4

  1. All purpose flour 120 grams
  2. cornflour 1 tablespoon
  3. Powdered cane sugar 100 gram
  4. Oil 1/4 cup ( I used equal ratio of melted butter and sunflower oil
  5. Baking powder 1/2 teaspoon
  6. Baking soda 1/2 teaspoon
  7. Hung curd 1/3 cup ( use fresh curd)
  8. Orange juice 1/2;cup
  9. Orange zest 1 teaspoon
  10. salt a amall pinch
  11. Vanilla essence 1 teaspoon
  12. Mix of cranberries, prunes, and tutti frutti 1/4 cup soaked in honey and brandy for a day
  13. All purpose flour around 1 tablespoon for dusting the soaked fruits


  1. Grease and line a cake loaf tin with butter paper
  2. Sieve all purpose flour , cornflour, salt, baking powder and baking soda
  3. In a bowl add sugar and oil- butter mix.
  4. Beat till sugar is blended.
  5. Add orange juice and stir nicely but do not overmix.
  6. Now add sieved flour mixture, vanilla essence and orange zest
  7. Dust the soaked fruits with all purpose flour so that they dont settle at the bottom.of the cake
  8. Fold in gently this fruits mixture of cranberries, prunes and tutti frutti with the cake batter.
  9. Bake in a preheated oven at 180 degrees Celsius for 35 to 40 minutes
  10. Insert toothpick to check if cake is baked.
  11. Cool cake, cut and enjoy
