Ingredients Serving: 6
For Dhoklas: Gram flour 200 gms
cocoa powder 50 gms
powdered sugar 100 gms
Water as needed
oil 2 tbn
baking powder 2 tsn
baking soda 1 tsn
salt as per taste
sour curd 150 gms
vinegar 1 1/2 tsn
chilli powder 1 tsn
For Tadka:
Asafoetida 1/2 tsn
Mustard 1/2 tsn
lemon juice 1/2 tsn
Curry leaves chopped 8-10 nos
Water 1/2 cup
green chillis whole 2
sugar 1/2 tsn
white sesame seeds 1 tsn
oil 2 tbn
Instructions
in a mixing bowl, take half (100 gms) grams gram flour
add red chilli powder, salt to taste
whisk 100 gm curd with 2 tbn warm water
Add the whisked curd and 1 tbn oil to the flour batter and combine well and rest aside for 30 minutes
in another mixing bowl, combine the remaining gram flour, cocoa powder
Add 100 gms powdered sugar and mix well by adding warm water and 1 tbn oil to make a thick batter(warm water will help melt the sugar)
Add the remaining curd bit by bit and fold in well. don’t over mix
let the batter rest for 30 minutes
After resting, add 1 tsn vinegar, 1 tsn baking powder and 1/2 tsn baking soda to each batter and mix well
Pour 500 ml water in a wok/ heavy bottomed container and bring it to boil covered
Grease a baking dish/container with 1 tbn oil
Pour in the normal dhokla batter first and tap the container to spread across the batter well
Pour in the Choco dhokla batter on it and gently layer it
reduce the heat to Low and place the dhokla dish inside the wok and steam covered for 20 minutes/till done
Take off heat after done and let cool slightly
For the tadka, combine all the ingredients listed under “ for tadka” on high heat for 1-2 minutes in a tadka pan
Take off heat and pour the tadka over the dhokla
cut into pieces and serve
