Ingredients Serving: 6

  1. For Dhoklas: Gram flour 200 gms
  2. cocoa powder 50 gms
  3. powdered sugar 100 gms
  4. Water as needed
  5. oil 2 tbn
  6. baking powder 2 tsn
  7. baking soda 1 tsn
  8. salt as per taste
  9. sour curd 150 gms
  10. vinegar 1 1/2 tsn
  11. chilli powder 1 tsn
  12. For Tadka:
  13. Asafoetida 1/2 tsn
  14. Mustard 1/2 tsn
  15. lemon juice 1/2 tsn
  16. Curry leaves chopped 8-10 nos
  17. Water 1/2 cup
  18. green chillis whole 2
  19. sugar 1/2 tsn
  20. white sesame seeds 1 tsn
  21. oil 2 tbn

Instructions

  1. in a mixing bowl, take half (100 gms) grams gram flour
  2. add red chilli powder, salt to taste
  3. whisk 100 gm curd with 2 tbn warm water
  4. Add the whisked curd and 1 tbn oil to the flour batter and combine well and rest aside for 30 minutes
  5. in another mixing bowl, combine the remaining gram flour, cocoa powder
  6. Add 100 gms powdered sugar and mix well by adding warm water and 1 tbn oil to make a thick batter(warm water will help melt the sugar)
  7. Add the remaining curd bit by bit and fold in well. don’t over mix
  8. let the batter rest for 30 minutes
  9. After resting, add 1 tsn vinegar, 1 tsn baking powder and 1/2 tsn baking soda to each batter and mix well
  10. Pour 500 ml water in a wok/ heavy bottomed container and bring it to boil covered
  11. Grease a baking dish/container with 1 tbn oil
  12. Pour in the normal dhokla batter first and tap the container to spread across the batter well
  13. Pour in the Choco dhokla batter on it and gently layer it
  14. reduce the heat to Low and place the dhokla dish inside the wok and steam covered for 20 minutes/till done
  15. Take off heat after done and let cool slightly
  16. For the tadka, combine all the ingredients listed under “ for tadka” on high heat for 1-2 minutes in a tadka pan
  17. Take off heat and pour the tadka over the dhokla
  18. cut into pieces and serve
