Ingredients Serving: 4

  1. Spinach 1lb
  2. Oil 1 tbsp
  3. Black mustard seeds 1 tsp
  4. Onion, thinly chopped 1
  5. Garlic cloves, crushed 2
  6. Root ginger, finely chopped 1
  7. Potatoes, cut into 1 in chunk 1 1/2
  8. Chilli powder 1 tsp
  9. Water 1/2cup

Instructions

  1. Wash & trim the spinach, then blanch it in a saucepan of boiling water for about 3-4 minutes.
  2. Drain the spinach thoroughly and set aside. when it cool enough to handle, use your hands to squeeze out any remaining liquid.
  3. Heat the oil in a large heavy-based saucepan and fry the mustard seeds for 2 minutes or until they splutter.
  4. Add the sliced onion, garlic cloves and chopped ginger to the mustard seed and fry for 5 minutes, stirring.
  5. Add the potato chunks, chili powder, salt and water and stir-fry for a further 8 minutes.
  6. Add the drained spinach. Cover the pan with a lid and simmer for 10- 15 minutes or until the potatoes are tender.
  7. Serve hot.
