Ingredients Serving: 6

  1. Ingredients for making Dough:-
  2. Whole wheat flour 1 cup
  3. All purpose flour 1 cup
  4. olive oil 1 1/2 Tbsp
  5. Warm water 1/4 cup
  6. Active yeast 1/2 Tbsp
  7. sugar 1/2 Tbsp
  8. salt 1 Tsp
  9. Baking powder 1/4 Tsp
  10. yoghurt 1 Tbsp
  11. water As required for preparing dough.
  12. Ingredients for preparing spread:-
  13. olive oil 1/4 cup
  14. butter Melted. 2Tbsp
  15. Ingredients for filling:-
  16. sweet corn 1/4 cup
  17. Peas. 3Tbsp
  18. Chopped bell peppers. 1/4 cup
  19. Chopped zucchini. 1/4 cup
  20. salt to taste
  21. Dried italian herbs. 2 Tbsp
  22. Pizza sauce/Tomato ketchup 4Tbsp
  23. White sesame seeds. 2Tbsp
  24. Milk/egg wash. 2 Tbsp

Instructions

  1. Mix olive oil and melted butter mix and keep aside.
  2. Take all the vegetables in a microwave bowl.
  3. Microwave vegetables for 5 minutes on high power.
  4. Transfer vegetables in another bowl .
  5. Add pizza sauce ,italian seasoning and mix well.
  6. Keep the filling aside.
  7. Take a Luke warm water in a cup .
  8. Add active yeast, sugar and mix well.
  9. Let it rest on counter top for 10 minutes to activate the yeast.
  10. In a big bowl add flour,salt ,baking powder .
  11. Mix everything well with your hands.
  12. Now add butter, curd , olive oil.
  13. Start binding the dough well.
  14. Now slowly add the proofed yeast mixture .
  15. Slowly add extra water to knead the dough.
  16. Knead the dough for 8-10 minutes.
  17. Cover and let it rise until double in size.
  18. Punch the proofed dough down .
  19. Make 10 balls and keep aside.
  20. Start by taking one ball .
  21. Roll it to make a big and very thin chapati.
  22. Keep aside and take the second ball and prepare thin chapati in the same way.
  23. Take Olive oil butter mixture and spread it all over the one layer.
  24. Place another layer of chapati over the spread .
  25. Layered it until all 5 layers are done.
  26. Leave the top layer don't apply spread on top layer.
  27. Roll it in the shape of log loosely.
  28. Now preheat oven at 200*c for 10 minutes.
  29. Cut the log pieces into 1 inch thickness.
  30. Flatten the piece into disc shape with your hands .
  31. Add about 1Tbsp of filling in between and close the sides with your finger tips.
  32. Place the layered pocket in the baking tray.
  33. Same way prepare all the pockets .
  34. Before baking in the oven brush the pockets with milk wash gently.
  35. Sprinkle sesame seeds on top of the pockets.
  36. Bake in preheated oven for 15 minutes or until light brown in color.
  37. Serve hot with dip of your choice or plain with a cup of hot tea/coffee.
