ABOUT Dates & Nuts Tea cake - A twist RECIPE

The twist or hidden ingredient here is the brewed coffee which makes this tea cake heavenly in taste.

Ingredients Serving: 4

  1. 3/4 cup +2tbsp hot brewed coffee
  2. 1.5 cups all purpose flour
  3. 3/4 cup chopped dates
  4. 1/4 cup chopped nuts
  5. 1 cup sugar
  6. 2tbsp soft butter
  7. 1tsp baking powder
  8. 1tsp baking soda
  9. 1egg
  10. 1/2 tsp vanilla extract
  11. Salt pinch

Instructions

  1. Preheat oven to 180. Grease loaf pan
  2. Sieve dry ingredients and keep it aside
  3. Beat sugar and butter. Add egg and blend until mixture is pale and creamy. Add dates, nuts, vanilla extract and mix well
  4. Alternatively add hot brewed coffee and dry ingredients to the dates mix. Cut and fold gently. Pour batter to loaf pan
  5. Bake for 25-35 minutes until done. Allow to cool completely. Cut and serve these yummilicious cake
