Ingredients Serving: 2

  1. 1/2 cup flattened rice, nicely powdered
  2. 1 tsp vineger
  3. 1/4 tsp baking soda
  4. A pnch of salt and pink food colour
  5. 1 and 1/2 tsp mixed fruit essence
  6. 3/4 cup butter
  7. 1 cup condensed milk
  8. 1 cup hung curd
  9. 1 and 1/2 cup maida
  10. 1/2 tsp baking powder
  11. For the filling:
  12. 1 cup whipped cream
  13. 1 cup diced strawberry
  14. 1 tsp vanilla essence

Instructions

  1. In a mixing bowl, add condensed milk, hung curd and whipped it. Then add butter into it.
  2. In another bowl, sieve the maida, flattened rice, baking soda and powder together.
  3. Add the dry ingredients and mix it with the wet ingredients slowly in a cut and fold manner. Then add the colour, vinegar, salt and essence in it.
  4. Transfer this batter in a greased cake tin and bake it in a preheated oven on 180 degrees celsius for 40-45 mins or till its done.
  5. Once it cools, take a large bowl and make a well in the centre of the cake and fill it with the prepared whipped cream and strawberries.
  6. Garnish with homemade saffron jelly and serve.
