ABOUT Multi-Grain Crackers with Sesame Seeds, Chives and Chilli Flakes RECIPE

This is a heart-friendly recipe that is all purpose flour free; uses a mixture of grains like bajra, ragi, jowar and whole wheat and contains HEART-FRIENDLY ingredients like CHIVES and CHILI FLAKES. Ingredients Serving: 4

  1. Whole wheat flour 3/4 cup
  2. Sorghum flour/ jowar flour 1/4 cup
  3. Pearl millet flour/ bajra flour 1/4 cup
  4. Finger millet flour/ ragi flour (preferably sprouted ragi flour) 1/4 cup
  5. Salt and Pepper, to taste
  6. Finely chopped fresh chives 1/4 cup
  7. Sesame seeds, lightly toasted 1/2 cup
  8. A few tablespoons of chili flakes (add as per spice tolerance)
  9. Coconut oil/ olive oil 6 tablespoons
  10. Water 1/2 cup + 2 tablespoons

Instructions

  1. Add all the flours into a large mixing bowl. Into this add the toasted sesame, chopped chives, chili flakes and salt. Mix well. Pour in the oil and mix all the ingredients till well combined.
  2. Now add water little by little and knead this mixture into a dough. (Add more or less water than mentioned in the recipe, depending on water absorption capacity of flours).
  3. Cover the dough and leave to rest for around 15 to 25 minutes at room temperature.
  4. Pre-heat oven at 175 Degree Celsius.
  5. Roll out the dough into a large circle and cut out desired shapes with a cookie cutter. You can also use a pizza cutter to cut these into shapes.
  6. Bake for 12 to 15 minutes or until the edges turn a light brown and the crackers turn crisp. Take care not to burn them.
