Gatte Ki Sabzi

Ingredients to make Gatte Ki Sabzi

  • 1 cup gram flour
  • turmeric powder 1 /4 tsp
  • 1/4 tsp red chilli powder
  • 1/4 tsp cumin seeds
  • 1/4 tsp garam masala
  • 1 tsp oil
  • salt to taste
  • 4 cups water
  • 3 tbsp ghee
  • 1/4 mustard seeds
  • 1/4 corriender powder
  • 1/4 red chilli powder
  • salt to taste
  • 2 tbsp corriender leaves chopped
  • 1 tsp kasoori methi
  • 1/4 garam masala
  • 1/4 turmeric powder
  • 1 green chilli chopped
  • 1 tsp ginger paste
  • 1 pinch asafoetida
  • 1/4 cumin seeds

How to make Gatte Ki Sabzi

  1. MIX 1 CUP GRAM FLOUR, SALT, 1/4 TSP EACH OF RED CHILLI POWDER & GARAM MASALA
  2. ADD 1/4 TSP EACH OF TURMERIC & CUMIN
  3. ADD WATER, KNEAD INTO A STIFF DOUGH
  4. ADD LITTLE WATER AT A TIME
  5. MAKE A POORI-LIKE DOUGH
  6. DIVIDE INTO EQUAL PORTIONS WITH GREASED PALMS
  7. SHAPE EACH PORTION INTO 1/2 INCH THICK ROLLS
  8. MAKE LONG CYLINDERICAL ROLLS LIKE THESE
  9. BOIL 3 CUPS OF WATER, ADD THE ROLLS
  10. COOK UNTIL THEY START TO FLOAT ON TOP
  11. TRANSFER CAREFULLY TO A PLATE
  12. COOL FOR 5 MINS
  13. RESERVE REMAINING WATER FOR MAKING THE GRAVY
  14. CUT SMALL PIECES FROM THE ROLLS
  15. KEEP ALL PIECES READY
  16. HEAT 1 TBSP GHEE, SHALLOW FRY THE PIECES
  17. FRY THEM ON MEDIUM HEAT FOR 2 MINS
  18. HEAT 2 TBSP GHEE, ADD 1/4 TSP EACH OF MUSTARD, CUMIN & ASAFOETIDA, 1 TSP GINGER PASTE
  19. ADD 1 TSP GREEN CHILLIES
  20. ADD 1 DRY RED CHILLI
  21. ADD 1/4 TSP EACH TURMERIC, RED CHILLI, CORIANDER & GARAM MASALA POWDERS
  22. MIX 1 CUP CURD WITH 1 TSP GRAM FLOUR
  23. MIX WELL
  24. ADD BEATEN CURD MIX ON LOW HEAT
  25. STIR CONTINUOUSLY
  26. ADD THE RESERVED WATER
  27. WHEN IT COMES TO A BOIL, ADD THE FRIED GATTAS
  28. ADD SALT TO TASTE, SIMMER FOR 4-5 MINS
  29. SPRINKLE 1 TSP KASOORI METHI
  30. TRANSFER TO A SERVING DISH
  31. GARNISH WITH A HANDFUL OF FRESH CORIANDER
  32. SERVE HOT
