Ingredients Serving: 2

  1. 2 cups poha/flattened rice/beaten rice
  2. 2 tbsp oil
  3. 1 tsp mustard seeds
  4. 1 tbsp peanuts/groundnuts
  5. 1 tbsp very finely chopped green chillies
  6. 8-10 fresh curry leaves
  7. 3 medium size finely chopped onions
  8. salt - to taste
  9. a pinch of sugar(optional)
  10. 2 tbsp coriander leaves
  11. 2 tbsp coriander leaves

Instructions

  1. Firstly, take a strainer, into it add poha and wash poha twice and set it aside for about 5-10 minutes and let the water drain out completely.Excess washing and soaking makes the poha soggy therefore, do not do it.
  2. Take a pan/wok, into it, add oil and heat it.
  3. Add mustard seeds and let them crackle.
  4. Add peanuts and roast for few seconds.
  5. Add finely chopped green chillies and saute.
  6. Add curry leaves into it.
  7. Add chopped onions and saute for few seconds.
  8. Into it, add salt as per taste.
  9. Add few sugar crystals and stir well(optional).
  10. Add the washed poha into it.
  11. Mix the poha well with the cooked onion mixture.
  12. Add some freshly chopped coriander leaves into it.
  13. Finally add in some lemon extracted juice all over, mix and cook for few seconds.
  14. Switch off the flame.
