This is a traditional Bengali breakfast served on special occasions.

Ingredients Serving: 4

  1. For the dough
  2. 2 cups maida or all purpose flour
  3. Salt
  4. Oil
  5. Water
  6. For the stuffing
  7. Chana dal or Bengal gram 1 cup soaked overnight
  8. Hing or asofoetida a fat pinch
  9. Cumin seeds 1/2 tsp
  10. Red chilli powder
  11. Whole red chilli
  12. Ginger paste
  13. Sugar
  14. Roasted cumin powder
  15. Oil
  16. Fennel seeds 1/2 tsp
  17. Bay leaf
  18. For veg potato curry
  19. Boiled potato 500 gm
  20. Tomatoes chopped 200gm
  21. Ginger paste
  22. Turmeric powder
  23. Coriander powder
  24. Slit green chilies
  25. Asofoetida a pinch
  26. Salt to taste
  27. Cumin seeds 1 tsp
  28. Mustard oil

Instructions

  1. Take all the ingredients under dough by adding water as required and make a soft dough
  2. Boil the soaked dal with some salt
  3. Then grind to a fine paste with some green chilies
  4. Heat oil in a pan
  5. Put a bay leaf,cumin and fennel seeds.
  6. As it splutters add the hing
  7. Then add ginger paste
  8. As soon as the aroma comes add the dal paste
  9. Stir continuously as it will tend to stick.
  10. Slowly it will leave sides.
  11. Then add some red chilli powder and roasted cumin powder
  12. Add salt and sugar
  13. The stuffing is ready
  14. Veg potato curry
  15. Heat mustard oil
  16. Then add a bay leaf
  17. After that add cumin seeds
  18. As it splutters add hing or asofoetida
  19. Add ginger paste
  20. Then add the chopped tomatoes
  21. As soon as it becomes mushy add the dry masalas one by one
  22. As soon as oil separates add the half crushed boiled potatoes
  23. Add water as required
  24. Add slit green chilies and salt to taste.
